    Dear Friends, I can remember learning about the glories of beans when I was young lad in grammar school. Just before spring holiday, our teacher gave us glass jar filled with soil and a handful of brightly colored beans. I pressed those living seeds into the dirt and when we returned a week later, I was astounded by the sight of the green shoots that had sprung forth. Today, my sense of wonder with beans, their pleasant flavors and healthful bounty thrives on in my line of Heritage Beans.

    Cannellini beans originated in Argentina, but they are most popular in Italy, especially in the region of Tuscany. It's no wonder why this bean is so beloved by Italian cooks - it s wonderfully plump, with a texture that is rich, meaty and terrifically smooth. Short of growing them yourself, these are the freshest cannellini beans you can get - you can tell by the wonderful nutty flavor and perfectly creamy texture.

    Stovetop Instructions

    Sort and rinse 3/4 cup cannellini beans.* Place in a medium pot with 3 cups water. Cover and bring to a boil. Reduce heat to medium-low and cook until beans are sot, 60-90 minutes. Add more water as needed while cooking to keep beans covered. Makes 4 servings (about 2 cups).

    *Optional: To reduce cooking time, soak beans in water overnight in the refrigerator. Drain and discard soaking water before proceeding.
