These soba noodles are better than the majority that we buy in Japan (we go back and forth to and from there, with homes in both countries). The taste is fresh and wholesome, and unlike the majority of cheaper dried Japanese soba noodles, these are very low or almost no sodium. If you eat them with a soy-sauce based dipping sauce (available at Asian markets), you get all the sodium you could ever want, but it's nice to have a low-sodium alternative like this. The flavor is sweet, fresh buckwheat goodness.
